Fruity Oatcakes

I have a teenage son with CF who has little interest in food. I look for foods that are "portable" for him and don't require effort to prepare. These oatcakes are very healthy and he usually eats them without a fuss.

Ingredients

  • 4 c old-fashioned oats
  • 2 c flour, any kind
  • 1/2 c brown sugar
  • 1 tsp cinnamon, optional and to taste
  • 1 1/2 c raisins or other dried fruit
  • 1 1/4 c boiling water
  • 1 tsp baking soda
  • 1 stick butter, softened (not margarine)
  • 3/4 c unsweetened applesauce or vegetable/canola oil

Instructions

Prep Time: 20 minutes

Step 1
Boil water.

Step 2
Grease 2 baking sheets.

Step 3
In large bowl mix oats, flour, sugar and cinnamon. Add dried fruit to coat well.

Step 4
Mix baking soda into boiling water and let sit.

Step 5
Add butter and applesauce or oil to dry mixture using a spatula. It should be very stiff.

Step 6
Now pour the soda water into the dough. Continue to mix well.

Step 7
Using your hand, shape dough into 4" round and 3/4" high oatcakes on baking trays, (makes approximately 13-15).

Step 8
Gently press them with your hands to ensure they stay together after baking.

Step 9
Bake at 400 degrees for 10-15 minutes until lightly browned and cool on wire rack.

Step 10
You can stick them in a sandwich baggie or wrap them in saran wrap for an easy breakfast or lunch with a piece of fruit.
