Broccoli Summer Crunch Salad
I am the mother of a CF adult son who likes his veggies and this is a great way to get your children to eat and like vegetables. Our son is 37 and still likes this vegetable salad with any meal.

Ingredients
- 4 large crowns of broccoli, broken into florets
- 1 bunch of green onions, diced
- 1/2 pkg bag of baby carrots, chopped
- 1/2 c dried cranberries and/or raisins
- 1/2 c toasted almonds
- 3/4 c mayo
- 1/2 c honey
- 1 tsp curry powder
- Salt and pepper to taste

Instructions
Prep Time: 20 minutes
Step 1
Wash, chop vegetables.
Step 2
Place all vegetables, fruit and nuts in a large bowl.
Step 3
Mix dressing ingredients by whipping mayo, honey, curry powder and salt and pepper in a separate bowl.
Step 4
Add dressing to vegetables and let sit for a while in the refrigerator to allow the flavors to blend.
