Pumpkin Chocolate Chip Cookies

My son Spencer has CF and making sure he eats enough has always been a major concern for his dad and me. Besides being a very picky eater, he has never had much of an appetite. Our good friend and neighbor, Maija, made these cookies for his nursery school class one day and Spencer loved them. Over the years she has continued to bake these cookies as a treat for Spencer, though she often tweaks the ingredients to make the cookies healthier while still delicious. Maija delivered the latest batch to Spencer in June to celebrate his graduation from high school, and he's hoping she'll continue to send them to him at college in Boston.

  • 1/2 c Butter, softened
  • 1 1/2 c Sugar
  • 1 Egg
  • 1 can(s) Pumpkin (15 oz)
  • 1 tsp Vanilla
  • 2 1/2 c Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Nutmeg
  • 1 tsp Cinnamon
  • 1 Bag Chocolate Chips
  • Add All Ingredients


Step 1
Cream butter and sugar together.

Step 2
Beat in egg, pumpkin and vanilla.

Step 3
In separate bowl, mix together dry ingredients.

Step 4
Combine both bowls.

Step 5
Stir in chocolate chips.

Step 6
Drop by teaspoon onto well-greased cookie sheet.

Step 7
Bake at 350 degrees for 12-15 minutes.

Step 8
Makes about 4 dozen soft cookies.
