Apple Cobbler Perfect for Ice Cream!

My daughter, 30 years old, was diagnosed with CF when she was 22 months old. She has always loved apple cobbler topped with vanilla ice cream.

  • 2 lb Granny Smith apples, cored, peeled and sliced
  • 4 Tbsp unsalted butter for sautéing apples
  • 1 c raisins
  • 3/4 c golden brown sugar
  • 3/4 c white granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 lb unsalted butter
  • 1 c unbleached white flour
  • 1 tsp kosher salt
  • 1/2 c whole milk
  • Vanilla ice cream and/or whipped cream to top the cobbler

Prep Time: 45 minutes
Cook Time: 50 minutes or until crust is golden brown.

Step 1
Peel, core and slice the apples into 1/8 inch thick slices.

Step 2
In medium frying pan, melt the 4 tablespoons of butter on medium heat.

Step 3
Add the apples and raisins, sauté over medium heat until the apples are tender (more firm than mushy).

Step 4
Mix the sugars together.

Step 5
Add 1/4 cup of the combined sugars and the spices to the apple mixture. Stir and set aside.

Step 6
Melt the 1/4 pound of butter in the microwave. Pour it into a 7x11x2 inch baking dish, spreading evenly on the bottom.

Step 7
Mix the remaining sugar with the flour, baking powder and salt. Whisk together.

Step 8
Stir in the milk until well combined. Do not over mix.

Step 9
Spread batter on top of the butter in pan

Step 10
Pour the apple mixture over the batter and bake in 350 degree oven for about 50 minutes, or until crust is golden brown.

Step 11
Serve in bowls, topped with ice cream or whipped cream, or both. Can also sprinkle nuts on top.
