Veggie Meatballs

My son is 16 months old and has CF. We have struggled with how to keep his weight gain steady while teaching him to eat a variety of foods. These meatballs have been a savior. I have experimented and used a variety of veggies in the meatballs and he seems to love them all. The coconut oil and applesauce make them very moist and they are easy to freeze. I sometimes serve them to him with some of a vegetable pouch on top as the "sauce." Anything for those extra calories!!

  • 1 lb ground beef
  • 1 lb ground turkey
  • 3 c sweet potato
  • 2 c green beans
  • 3 c spinach
  • 2 c broccoli
  • 8 eggs
  • 2 c bread crumbs or quinoa
  • 2 apples
  • 2 c cups apple sauce
  • 3 fl oz coconut oil
  • 3 fl oz heavy cream
  • Add All Ingredients


Prep Time: 15-20 minutes

Step 1
Steam sweet potato, green beans and broccoli. I like to use veggies that steam in the bag to cut time.

Step 2
Use your food processor to chop sweet potato, green beans, spinach, broccoli and apples.

Step 3
Mix in large bowl with turkey and beef.

Step 4
Add applesauce, eggs, coconut oil and cream. Mix well.

Step 5
Add bread crumbs or quinoa to thicken the mixture

Step 6
Mix well until consistency is ready for scooping into meatballs.

Step 7
Scoop into tablespoon-size balls and bake on a greased foil-lined cookie sheet for 10 minutes at 450 degrees.

Step 8
These are great for freezing once they have cooled from baking.
