Simple Spoon Bread

My adult daughter has CF. She loved this spoon bread recipe when she was a little girl. We added lots more butter to each serving in addition to the butter placed on top of the bread prior to broiling. Can also make it a sweet treat and add jam to the top and whipped cream.

  • 1 c fine cornmeal (yellow)
  • 1 1/2 tsp salt
  • 2 c whole milk, warmed in microwave
  • 1/2 tsp white pepper
  • 2 1/2 tsp baking powder
  • 2 large eggs
  • 1/2 stick(s) unsalted butter
  • Add All Ingredients


Prep Time: 30 minutes
Cook Time: 35 minutes

Step 1
Preheat oven to 350 degrees.

Step 2
Separate eggs.

Step 3
In small, but tall bowl, beat egg whites with electric mixer on high until very stiff. Set aside.

Step 4
Whisk yolks until frothy in another bowl. Set aside.

Step 5
In microwavable bowl, microwave on high, 2 cups of whole milk, for 1 1/2 to 2 minutes, until hot.

Step 6
In saucepan: put cornmeal, salt and pepper; stir while adding the hot milk.

Step 7
Cook on low heat, stirring all the time, for about 15 minutes. Remove from heat.

Step 8
Stir in the baking powder and the frothy egg yolks.

Step 9
Fold in the stiff egg whites.

Step 10
Pour batter into a greased 8 x 8 inch pan.

Step 11
Bake for about 35 minutes, until firm and crust is brown.

Step 12
Cut 1/2 stick of butter into chunks to place over top of spoon bread.

Step 13
Place until broiler long enough for butter to melt.
