Tom's Famous Chili

I am a CF adult, 46 years old, and am 8 years post double lung transplant. I've been vegan for over a year and been doing very well. This recipe I've submitted is something I make on a regular basis.

Ingredients

  • 1 pkg Fantastic Vegetarian Chili Mix
  • 1 onion
  • 1 can(s) diced tomatoes
  • 1 pkg Tofurky dogs
  • 2 russet potatoes
  • 2 yams
  • 1 pkg mushrooms
  • 1 can(s) kidney beans
  • 1 can(s) black beans
  • 1 Tbsp chili powder
  • 1 tsp cilantro
  • 1 tsp rosemary

Instructions

Step 1
Chop potatoes and yams; boil in water for 10 minutes.

Step 2
In a separate large pot, add 3 cups of water heat on medium for 5 minutes, add chopped onion.

Step 3
Add in mushrooms, canned beans (black and kidney) and box of "Fantastic Vegetarian Chili Mix".

Step 4
Also, add Tofurkey Dogs (2) chopped in slices into large pot with the listed spices.

Step 5
Stir thoroughly, and then pour the cooked (boiled) potatoes and yams, including the boiled water, into the large pot.

Step 6
Let cool for 10 minutes and serve.
