Passe Stew
I was diagnosed with cystic fibrosis at the age of seven. Before the diagnosis it was a struggle for me to gain weight. My parents didn't know what was wrong or how to fix my situation, so they tried many ways to put more calories in my diet. They would sit there and watch me eat to make sure I was eating everything, but they still couldn't figure out why I didn't gain weight. My father devised this recipe from something my grandmother used to feed him as a kid. I loved it because it offered something different for me to eat and it had lots of protein in it. To this day it is one of my favorite dishes to prepare and eat regularly. As a cystic fibrosis patient you get tired of the same protein shakes and high protein recipes, but I never tire of this one.

Ingredients
- 1 lb ground beef
- 1 can(s) ranch style beans
- 1 can(s) whole kernel corn
- 1 can(s) green chilies
- 1 can(s) diced tomatoes
- 1 c white rice (optional)
- 4 tsp Tapatio/Tabasco
- Add All Ingredients
Instructions
Step 1
In a large pot thoroughly cook ground beef over medium high heat. Season the meat with salt and pepper if desired. If you use ground beef high in fat, drain excess fat
Step 2
Once beef is cooked add beans, corn, chilies, and tomatoes.
Step 3
Cook on medium heat for 10 minutes, stirring every 2 minutes.
Step 4
Season stew as desired. (Approximately 4 teaspoons Tapatio/Tabasco for a little spice)
Step 5
Prepare rice as follows if you want to add it to the stew.
Step 6
Start the rice when you start cooking the beef.
Step 7
Bring 2 cups of water to a boil.
Step 8
Add 1 cup of rice, stir a few times and lower heat to medium low.
Step 9
Cover pot with a lid and let it sit for 20 minutes.
Step 10
Add to the stew when complete.
