Nanny's Yummy Chicken

I am a grandmother of a grandson, age 20, with CF. This recipe is from his great grandmother on my husband's side who was a CF carrier. She was a fabulous cook and created this casserole dish. It freezes well. A family favorite!

  • 4 oz flour
  • 4 oz canola oil or equivalent
  • 8 chicken thighs
  • 2 tsp salt and pepper
  • 1 Tbsp Italian seasoning
  • 4 oz chicken broth
  • 1 onion
  • 1 lemon
  • 2 Tbsp chopped parsley
  • 1 Tbsp paprika
  • 1 can(s) of mushrooms and juice
  • 4 c steamed rice
  • Add All Ingredients


Step 1
Flour chicken thighs and brown lightly in electric frying pan (or regular pan).

Step 2
Place in casserole dish and sprinkle with paprika, Italian seasonings, salt and pepper.

Step 3
Add chicken broth.

Step 4
Pour most of oil out of pan and add chopped onion and can of mushrooms and juice.

Step 5
Clean out pan with this mixture and pour over chicken in casserole dish.

Step 6
Add juice of one lemon and chopped parsley.

Step 7
Bake at 350 degrees for 45 minutes.

Step 8
Serve over steamed rice (white or brown).
