Fresh Salsa/Lime Chicken

This is a favorite recipe of my daughter Maggie, a 26-year-old with CF awaiting a double-lung transplant at Stanford. I often doubled the salsa and rice so she had it as a snack the next day! I added butter to her rice for more calories. We are active in CFRI.

Ingredients

  • 4 chicken breasts, boneless/skinless
  • 4 Tbsp olive oil
  • 2 Tbsp butter
  • 6 Tbsp Dijon mustard
  • 2 c fresh mild/medium salsa
  • 3 oz fresh lime juice
  • 4 Tbsp fresh cilantro, chopped

Instructions

Step 1
Pound chicken breasts to desired thinness.

Step 2
Spread mustard on chicken and sauté in olive oil/butter at medium heat for 5-7 minutes.

Step 3
Remove chicken.

Step 4
Add salsa and lime juice to pan; gently heat.

Step 5
Add chicken to pan, cook until chicken is done and top with cilantro.

Step 6
Serve over rice.
