Grandmother's Country Chicken

Our son who has CF loves eating this dish which helped him maintain his weight and good health. He often ate two servings at once as he had an amazing appetite. Our family company always had compliments when this dish was served.

Ingredients

  • 8 boneless, skinless chicken breasts
  • 2 Tbsp olive oil for browning
  • 2 large green peppers
  • 2 onions, cut up
  • 28 oz chopped tomatoes
  • 3 tsp ground thyme
  • 3 tsp ground curry
  • 1 tsp onion salt or onion powder
  • 1 tsp garlic salt
  • 1/4 tsp ground white pepper
  • 2 c brown rice

Instructions

Prep Time: 40 minutes
Cook Time: 40 minutes

Step 1
Preheat oven to 350 degrees.

Step 2
Brown chicken in heavy skillet.

Step 3
Place chicken in covered baking dish while preparing sauce.

Step 4
Start rice if it requires 45 minutes of cooking following directions on box.

Step 5
Combine rest of ingredients in same skillet in which you cooked the chicken. Heat at medium temperature and heat until just under boiling.

Step 6
Pour sauce over chicken so all chicken is covered.

Step 7
Place chicken in oven for 40-45 minutes.

Step 8
Serve over brown rice.
