Easy Burritos

As a person with cystic fibrosis, I am constantly trying to take in a lot of calories. This easy burrito dinner was born out of a need for good quick meal. I typically set the crock pot with meat in the morning, leave for work and upon my return the house smells wonderful. Most of the hard work is done by the machine. Then it is just a matter of cooking the rice and warming up the other ingredients. This is a great meal full of nutritious protein and is a good way to fill you up! It is also easy on the wallet.

Ingredients

  • 1 1/2 lb chicken (breast or thigh meat)
  • 1 pkg taco or burrito seasoning (any brand)
  • 1 can(s) black beans
  • 1 pkg Spanish rice
  • 1 pkg shredded cheese
  • 1 small container of sour cream
  • Burrito shells (any brand)
  • Pickled jalapenos (optional)
  • Add All Ingredients

Instructions

Step 1
Mix taco or burrito season package and 1 cup water in a crock pot (slow cooker).

Step 2
Add chicken and let cook for 5-6 hours.

Step 3
After 5-6 hours, the chicken can be mashed with a potato masher and mix into the juice. This will shred the chicken, which gives it a much better flavor.

Step 4
Prepare a box of Spanish rice according to box instructions.

Step 5
Warm the burrito shells in the microwave or in the oven. If using the oven, cover in aluminum foil. Warm the beans in the microwave or stovetop.

Step 6
Assemble the burrito to your liking. I typically add some chicken, rice and beans, then add cheese and jalapenos for a nice kick. Add sour cream before you wrap up the burrito adds a nice flavor.
