Curried Chicken Casserole

This simple tasty dish is loved by our son who has CF. It is easy to double for company and I always serve it over brown rice.

  • 6 boneless, skinless chicken breasts
  • 2 Tbsp unsalted butter
  • 3 tsp curry powder
  • 1 apple, chopped fine
  • 1 can(s) cream of mushroom soup
  • 1 c heavy cream
  • 1 tsp salt
  • 1 tsp paprika
  • Add All Ingredients


Prep Time: 25 minutes
Cook Time: 1 1/2 hours

Step 1
Melt butter in a sauce pan and sauté in it the curry powder, apple and onion until the onion is transparent.

Step 2
Add soup and cream.

Step 3
Sprinkle salt and paprika over the chicken and spread it out in one layer in a shallow buttered baking pan.

Step 4
Pour the sauce over the chicken and bake uncovered at 350 degrees for 1 1/2 hours.
